Double Cheese & Bacon Egg Biscuits



When I saw this recipes on Picky-Palate I knew I had to make it. Great for portion control & easy to reheat during the week for my breakfast. Hard to resist having only one they are so good! I made two adjustments, I used 2 eggs & 3 egg whites instead of 4 eggs & only used 4 pieces of bacon.

4 eggs
2 Tbsp fat free milk
s & p to taste
1/4 cup reduced fat feta
1 can biscuits (10 count)
6 strips bacon, crumbled
1/4 cup fat free shredded cheddar

Preheat oven to 350. Place eggs in a bowl. Add milk, s&p, stir in feta.

Press each biscuit into muffin cups sprayed with cooking spray. Bake 6 minutes, remove from oven & with the end of a wooden spoon press centers of dough to make room for the egg mixture. Pour egg mixture into partially baked biscuit. (*tip: press & pour mixture in right away before moving onto pressing the next biscuit or the dough will fluff back up) Top with bacon & cheddar cheese. Bake an additional 12-15 minutes until eggs are set.

Breakfast Smoothie




Most mornings I like a good homemade egg sandwich. Some mornings I'm just not in the mood. Yesterday I decided to whip up a smoothie to get in my fruit & dairy servings for the day.

I took 1 cup of Almond Milk, a banana & 1 cup of frozen strawberries. Blended it with ice & breakfast was ready!

Easy Omelet


1 small potato, cubed
1 Just For One, Broccoli & Cheese, cooked
2 eggs/egg whites/egg beaters
1/4 cup any shredded cheese you like

Preheat oven to 350.
Cook Just for One according to directions.
Saute potatoes in frying pan until tender.
Mix eggs & cooked Just for One in a bowl.
Pour egg mixture into pan. Bake at 350 for 10 mins.
Sprinkle with cheese & continue cooking until melted.

Spinach Omelet


I don't know why but I've been loving spinach lately. Maybe it's the 0pt value or maybe it's because it goes with almost anything. This morning I made an omelet:

3 egg whites
1/2 cup sauted spinach
1/8 cup (or a pinch as I used) of fat free shredded mozzarella

saute spinach until wilted. In separate pan cook up egg whites. When they are starting to set, throw in spinach. Place in oven at 350 for 5 mins. Sprinkle with cheese, continue baking until cheese is melted. Delicious & only 1pt!

Omelette


3 small red potatoes, peeled & cubed
small onion, chopped
1/4lb bacon
1 cup mushrooms
1 cup spinach
6 eggs
4 tbsp fat free milk
1/4 cup fat free cheddar
salt & pepper to taste
2 tsp olive oil

Lay bacon on paper towels & cook in microwave until crisp, 6-8 minutes. Crumble bacon. Set aside.

Cook spinach in 1 tsp olive oil. Set aside. Add the other tsp of olive oil to pan. Add potatoes. Cook until tender. Add onions & mushrooms. Cook until onions are clear. Add spinach back into pan.

Add 6 eggs in a bowl with milk. Beat. Add in cheddar cheese & bacon, stir. Pour egg mixture over potatoes, onions, mushrooms & spinach. Bake at 350 for 20 minutes.

Makes 8 servings. 4 pts each

Broccoli & Cheese Mini Egg Omelets


4 cups broccoli florets
4 whole eggs
1 cup egg whites
1/4 cup reduced fat cheddar
1/4 cup good grated cheese like pecorino romano
1 tbs olive oil
salt and fresh pepper
cooking spray

Preheat oven to 350°. Steam broccoli with a little water for about 6-7 minutes.
When broccoli is cooked, mash into smaller pieces and add olive oil, salt and pepper. Mix well.

Spray cupcake tin with cooking spray and spoon broccoli mixture evenly into 9 tins.

In a medium bowl, beat egg whites, eggs, grated cheese, salt and pepper. Pour into the greased tins over broccoli until a little more than 3/4 full. Top with grated cheddar and bake in the oven until cooked, about 20 minutes. Serve immediately. Wrap any leftovers in plastic wrap and store in the refrigerator to enjoy during the week.

Makes 9 muffins. 2pts each.

Quiche


Erin made this recipe when I trekked my *ss from NY to PA to visit with her & Rachel. Was delicious, can't believe it took me so long to make it myself.

12oz frozen chopped broccoli
1 cup fat free milk
3 oz ham, diced
1/4 cup egg beater or 1 egg white
1/2 cup Bisquick
1/4 shredded cheese (I used cheddar)

Cook Broccoli according to directions. Mix cooked broccoli, ham, cheese & bisquick in a bowl. Pour into pie plate sprayed with cooking spray. Mix egg & milk together & pour over broccoli mixture. Bake at 400 for 25 minutes. 4 servings. 2 pts a serving.
