Mexican Style Pork & Sweet Potato Slow Cooker Stew

1lb pork, cut into 1 inch cubes
1/2 cup chicken broth
1 large sweet potato, chopped
1 small onion, chopped
14 1/2 oz can of Rotel
1/2 tsp cumin
1/2 tsp salt
1/4 ts pepper
1 tbsp lime juice

Place pork in crock pot. Add broth, salt & pepper, onion, rotel, cumin & sweet potato. Cook on low 6-7 hours. Add lime juice & stir well

1 1/2 cups per serving. 5 pts

I added a can of corn to this dish for color & an added vegetable. Brad topped his with Tabasco.
